So . . . I was at a loss for today’s topic and decided it was time to hit my “test” kitchen. A couple of weeks ago I was watching Rachael show and Sunny Anderson was making Micro Mug Desserts! Of course I thought of a way to make this “daily dietitian”-style. Here she is . . .Chocolate Peanut Butter Cake!
This is just waay to cool, I surprised myself! I was little leery as I put this mixture into the microwave but look, it actually turned out! AND this was so stinkin’ easy with ONLY three, yes, THREE ingredients!
First, spray a coffee mug with non-stick cooking spray.
Beat one egg and add one scoop of chocolate peanut protein powder. Remember this protein powder from the Chocolate Peanut Bar !
Add a drizzle of chocolate sauce.
Pour mixture into mug.
Microwave for 2 minutes. All done and flip on a plate.
I will warn you, if you stop the microwave in between the baking/cooking (not sure what call it in a microwave) and start it again, it does not come out very good. Let it bake for 2 minutes. Drizzle with a teeny tiny bit of chocolate syrup and enjoy!
Try sprinkling some cacoa nibs for a nutritional boost! Cacoa nibs come from raw cacao, the starter ingredient for all chocolate! These little bits are loaded with antioxidants and a super-rich source of magnesium. Magnesium is essential in keeping cortisol levels (key for proper metabolism) maintained and aiding in digestion. Since cacoa nibs are are similar to 85-100% cocoa, they are bitter in taste, but if you like dark chocolate, a little sprinkle gives a nice little crunch. You can also buy these nibs sweetened at a health food store. I found some in bulk, woohoo!
Chocolate Peanut Butter Cake in a Mug! (The title definitely needs an exclamation point!)
Ingredients
1 egg
1 scoop Chocolate Peanut Butter protein powder
1 tsp chocolate syrup
Preparation
Spray a coffee mug with non-stick cooking spray. In a small bowl, beat egg. Add protein powder and syrup. Place mixture into mug. Microwave on HIGH for 2 minutes. Drizzle with syrup and/or add cacao nibs or chocolate sprinkles.
Have this treat for breakfast, snack or dessert! Awesome!
